In the war-torn town of Sloviansk in eastern Ukraine, Serhii Kovalov, a sushi chef and restaurant owner, is defying the odds to serve fresh sushi to locals and soldiers despite the ongoing conflict with Russia. Despite enemy shelling and logistics issues, Kovalov was able to get fresh fish for Philadelphia rolls, a demand from his customers. In an area that has seen much devastation and loss of life, he remains committed to providing comfort food and a sense of normalcy for those affected by the conflict. Sushi has been a popular treat in Ukraine, and for people in Sloviansk, a city long in Russia’s cross hairs, this delicacy provides much-needed reprieve from the violence of war.
